Naming his restaurant after his great grandmother, Appolonia Varello (shown on the right with her husband, Rocco Giovanni), Chef Christopher Costantino had combined his love for cooking with his Italian heritage to produce favorite Italian specialties, including antipasti, spaghetti and meatballs, chicken parmesan, meatball sub sandwiches and cannoli for dessert. |

Christopher Costantino is the founder, Executive Chef and Chief Executive Officer of Molisiana Foods, LLC, which consists of Costantino's Kitchen (a producer of gourmet, home-style pasta sauces and other Italian specialty foods from fifth generation Italian family recipes), Appolonia Italian To Go (our delicious pasta restaurant), The Roman Crust (specializing in Roman style pinsa pizzas), Panino Gourmet (Italian hot and cold sandwiches) and CosCater (our catering division). Chris still follows his grandmother's tradition of using the freshest ingredients and slow cooking his sauces to deepen the flavor. Costantino's Kitchen was founded in 2011 and Costantino's Italian Kitchen, our food truck, was added in 2016. Finally, in 2025, we added our three new to-go/delivery restaurants. |
